The buffalo have been in existence in Israel from the time of the Bible. They have been domesticated about 5000 years ago and used for their milk, meat and as animals of burden. They can reach a weight of 900 kg and can live for 30-35 years. The milk of the buffalo is rich in protein, calcium, vitamin D and has a high fat content. Their milk is used for cheese production, yoghurt and other dairy products. Due to its high fat content their milk is used in the production of Mozzarella cheese. In Israel the buffalo are reared on Moshav Bitzaraon.
